Our cuisine is based exclusively on high quality ingredients. What distinguishes us is the knowledge of the raw material, the technical skills to properly store it and the sacredness that local products have.
A simple ingredient like pasta could be underestimated and not considered as an essential element in a first course. But the type and quality of the pasta is fundamental to enhance the seasoning.
We use fresh pasta such as pici, tagliolini and spaghetti alla chitarra bought from small local businesses.
Our tortelli are handmade and prepared by us.
The dry pasta we use belongs to major Made in Italy brands of the highest quality, preferring products such as Pasta di Gragnano.
We are daily supplied by local fishermen belonging to local cooperatives. Every morning we go personally to choose the fish and often this choice takes place directly on the boat just returned from fishing.
We prefer fish species that inhabit our waters, those of the Mediterranean Sea and specifically, from the waters in front of the Maremma Natural Park; we hardly buy raw materials from other places.
Our mission is to make known the species that are often underestimated but whose quality is undoubtedly high.

In line with our high quality mission, some secondary products come directly from our garden such as tomatoes, green beans, parsley, salad, courgettes and aubergines. The aromatic herbs such as myrtle, juniper, rosemary, sage and basil are collected in our garden.
